Ratatouille

We received eggplants from a friend's garden. We're always excited when people give us produce from their garden. 

Eggplants. What to do? 

Ratatouille, baby. We, magically, had everything we needed for the kitchen sink meal, which is so delicious. Tomatoes, bell peppers, eggplants, zucchini, onions, garlic, parsley. We chopped it all up, heated up some olive oil. 

It took no time at all. Chop the onions and garlic. Throw it in medium heat oil. Throw in the diced tomatoes (from can or not). Start chopping eggplants and zucchini. Tomatoes, and bell peppers. Throw everything in there. Cook on medium, stirring everything for about 20-30 minutes. Voila! Ratatouille! 

And then of course the movie came on. Of course, that was just perfect with a bottle of red wine and little baby boy.
